The cutting core is made of VG10 core steel, with an extreme hardness of 60-61 HRC on the Rockwell scale, which is significantly harder and sharper than other steak knives. A unique mineral composition with a high carbon content gives the knives exceptional durability, strength, and sharpness. As the final step in manufacturing, the steak knives are carefully polished and hand-sharpened on gentle whetstones.
