Tomato sauce
Tomato sauce is another of the five classic basic sauces in French cuisine – simple, rich and full of character. In this recipe, Brian Mark shows you how to make a deep and aromatic tomato sauce using San Marzano tomatoes, fresh herbs and a dash of sherry vinegar. A timeless classic that can elevate everything from pasta to meat and vegetable dishes.

Ingredients

Olive oil
2
shallots
2
cloves garlic
100 g
carrot
1 tbsp
tomato concentrate
1 tbsp
sherry vinegar
1 tsp
cane sugar
A few sprigs fresh oregano, thyme and rosemary
500 g
ripe San Marzano tomatoes, peeled
Coarsely ground black pepper
Avoid screen shutting off

Instructions

Step 1/9
Chop shallots, carrots and garlic into small cubes.
Step 2/9
Sauté onions, garlic and carrots in olive oil until they turn translucent.
Step 3/9
In the meantime, finely chop a few sprigs of rosemary and thyme.
Step 4/9
Add tomato concentrate and let it sauté briefly to bring out the sweetness.
Step 5/9
Add the peeled whole tomatoes together with the herbs, sherry vinegar and a little pepper.
Step 6/9
Let the sauce simmer for approximately 15 minutes.
Step 7/9
Blend with an immersion blender or in a food blender – depending on desired consistency.
Step 8/9
Taste and adjust with a little cane sugar, black pepper and salt.
Step 9/9
Finally add fresh, chopped oregano.
