Brian Mark Hansen
Brian Mark Hansen is regarded as one of Denmark’s most talented chefs. In 2023, he won the world’s most prestigious culinary competition, the “Bocuse d’Or”, which is also known as the unofficial world championship in the field. Søllerød Kro has held a star in the Michelin Guide since 2007, with Brian Mark serving as head chef from 2013 until 2025.
Since January 2026, Brian Mark Hansen has been head chef at Cori Table at Hornbæk Hotel, which is set to open its doors in the summer of 2026.

Erin Sykes’ journey to becoming one of Denmark’s most talented chefs has required many sacrifices and been marked by tough working conditions, before she was offered the position of head chef at Texture. Just eight months after opening, the restaurant was awarded a Michelin star – an accolade that she and her team continue to uphold to this day.

Jeppe Foldager
Jeppe Foldager has worked as a chef in many of the country’s most renowned restaurants, and even on the Royal Yacht Dannebrog. He has also headed up the kitchen as head chef at Dragsholm Castle, which boasts one of the prestigious Michelin stars – and he has now taken on the role of culinary director at Hotel Hesselet.

Thomas Rode Andersen
Thomas Rode Andersen qualified as a chef in 1990 and has since worked in several of the country’s very best restaurant kitchens. For 18 years, he was head chef at the one-Michelin-starred restaurant Kong Hans Kælder in Copenhagen.

Kristoffer Madsen won Rising Star 2025, Sol over Gudhjem’s talent competition for the newest names in Danish haute cuisine. In addition, Kristoffer Madsen has been a member of the Danish national culinary team for several years.
