Arrabiata-sauce

Pasta Arrabiata is an Italian classic with pasta in a simple tomato sauce with garlic, olive oil and dried chilli. It is typically made with whole peeled tomatoes for maximum flavour. Make a large portion while you're at it and store any leftovers in small containers in the freezer.

Ingredients

6 servings

6 cloves of garlic

0.75 dl olive oil

1-2 tsp chilli flakes

3 tins of peeled tomatoes

3 tbsp tomato purée

1 handful of basil

1 pinch of sugar

Salt and pepper


Method

Peel and chop the garlic. Heat the olive oil in a pan, add the garlic and chilli flakes and sauté for 1 minute, without allowing to brown.

Add the peeled tomatoes and tomato purée, bring to the boil and simmer for 30 minutes. Crush the tomatoes with a wooden spoon during cooking.


Pick and chop the basil and stir into the sauce. Season with sugar, salt and pepper.

Serve with pasta and grated Parmesan cheese.
