Lobster, caramelised lemon and homemade mayonnaise
Seared lobster is a simple and classic way to prepare lobster, and here Brian Mark explains how to do it. Together with burnt lemon and homemade mayonnaise, it's a combination that never disappoints. The result is a dish with plenty of flavor, perfect when you want to serve something special without making it unnecessarily complicated.

Ingredients

lobster (approx. 800 g)
1
organic lemon
0.5 dl
yuzu vinegar
0.5 dl
cognac
Olive oil
Salt and pepper
3
egg yolks
10 g
tarragon vinegar
10 g
Dijon mustard
3 g
salt
500 g
grapeseed oil
Avoid screen shutting off

Instructions

Lobster
Step 1/3
Place the prepared lobster on the pan with good olive oil and fry until golden. Remember that the claws need about 4 minutes longer than the tail.
Step 2/3
Flambé the frying pan and lobster first with cognac and then with yuzu vinegar.
Step 3/3
Split the lemon and place it on the pan cut-side down. It's done when a dark caramel has formed.
Mayonnaise
Step 1/1
Mix egg yolks, vinegar, salt and mustard together in a bowl. Then add the oil little by little while stirring constantly, until you have a thick, glossy mayonnaise.
