Lobste, caramelised lemon and homemade mayonnaise

This is a simple and classic way to prepare lobster, and here you’ll find Brian Mark’s recipe. Paired with burnt lemon and homemade mayonnaise, it’s a combination that never disappoints. The result is a dish full of flavour, perfect when you want to serve something special without making it unnecessarily complicated.

Ingredients

Lobster

  • 1 lobster (approx. 800 g)

  • 1 organic lemon

  • ½ dl yuzu vinegar

  • ½ dl cognac

  • olive oil

  • salt and pepper

 

Mayonnaise

  • 3 egg yolks

  • 10 g tarragon vinegar

  • 10 g Dijon mustard

  • 3 g salt

  • 500 g grape seed oil

 

Method

Lobster

Place the prepared lobster in a pan with good olive oil and fry until golden brown. Remember that the claws need about 4 minutes longer than the tail.

Cut the lemon in half and place it in the pan with the cut side facing down. It is ready when a dark caramel has formed.


Mayonnaise

Mix the egg yolks, vinegar, salt and mustard in a bowl. Then add the oil little by little, stirring constantly, until you have a thick, shiny mayonnaise.
