Adam Price, Danish tv chef and restaurant owner, elevates the classic danish cowboy toast to a whole new level with a juicy game patty, caramelised onions, melted cheddar, homemade brioche and a creamy ramson mayo that brings it all together.
The recipe is perfect on a griddle on the grill or over a campfire, where the cowboy toast gets that extra something you don't get on the stovetop indoors – although the dish can of course also be made there.

Ingredients:
Caramelised onions
3 large onions
Butter & oil for frying
Salt & pepper
Sugar
Sherry vinegar
Ramson mayo
1 egg yolk
1 tsp mustard
1 dl neutral oil
1 splash sherry vinegar
2 dl Ramson Oil
Salt and pepper
Game beef patties
400 g ground meat - the video uses game, but can be replaced with beef
200 g bacon
Cowboy toast
4 slices brioche bread
2 slices burger cheddar cheese
Worcestershire sauce
Instructions
Caramelised onions
Chop the onions finely and fry them until soft in a little oil and butter.
Salt, pepper and a little sugar – optionally a hint of vinegar for acidity.
A splash of water makes them soft a bit faster.
Ramson mayonnaise
Whisk an egg yolk together with a bit of mustard, a bit of vinegar, salt and pepper.
Whisk a deciliter of neutral tasting oil (grapeseed or sunflower) into the mixture in a very thin stream so the mayonnaise emulsifies.
Switch to the Ramson Oil and whisk the mayonnaise until done. It should be a nice green color and firm in consistency.
Chill it.
Game beef patties
Chop the bacon and massage it together with the ground meat.
Season with a little salt and pepper
Cowboy toast
Toast the brioche bread on one side and set it aside with the toasted side up. Drizzle a bit of Worcestershire sauce on the bread.
Fry the beef patties medium rare. When you flip them for the first time, place a slice of cheese on top of the fried side. Cover your griddle so the cheese melts.
Spread Ramson on the brioche bread.
Put soft onions on one piece of bread and place a beef patty on the other.
Close the cowboy toasts together and finish frying them in butter on the griddle. Be aware that it goes quickly – brioche browns fast.
Serve with ice-cold cola or a beer. Watch your favorite western and leave the hangovers to your cowboy toast. Remember to have enough for another round if it's a long movie – they're addictive.
