A crispy and delicious alternative to the classic beef burger. This version features chicken in a spiced breadcrumb coating, while the fresh element is a chili-spiced slaw made with red and green pointed cabbage and red onion. If you fancy it, you can also add a handful of grated carrot.

crème fraîche
4 tbsp
mayonnaise
1 tbsp
apple cider vinegar
0.5 tbsp
Dijon mustard
1 tsp
sugar
Chili powder to taste
Salt and pepper

wheat flour
3 dl
breadcrumbs
2 tsp
paprika
2 tsk
cumin
2 tsp
chili powder
1 tsp
garlic powder

large chicken breast fillets
Oil for frying
0.5 bunch
coriander

Mayonnaise
Salt and pepper

Instructions

Spicy slaw
Step 1/3
Slice the pointed cabbage. Peel the red onion, and slice it into thin rings.
Step 2/3
Mix crème fraîche, mayonnaise, apple cider vinegar, Dijon mustard and sugar in a bowl, and season the dressing with chili, salt and pepper.

Toss together with the vegetables.
Crispy Chicken Burger
Step 1/9
Whisk the eggs in a deep plate, and spread the flour and breadcrumbs in two more deep plates. Season the breadcrumbs with the spices, salt, and pepper.

Place the chicken fillets on a cutting board between two sheets of cling film and pound them flat with a rolling pin. Cut them in half.

Coat the chicken pieces first in the seasoned flour, then in the whisked egg, and finally in the breadcrumbs.

Coat them once more in the egg and breadcrumbs for an extra crispy crust.

Heat a generous amount of oil in a pan and brown the chicken pieces on both sides. Finish cooking on an oven rack at 180 °C for approximately 7–8 minutes, until they are cooked through.

Sprinkle them with a little salt.

Roughly chop the coriander.

Warm the burger buns in the oven, halve them, and spread them with mayonnaise.

Top with chicken, spicy slaw and coriander.
