Smash Burgers

Here is our take on a classic burger that can easily be made on the grill, over a fire, or indoors on the stove. Smash burgers give an extra crispy crust. All you need is a good cast iron pan or griddle. And of course a smasher / grill press.

Use ground beef with a high fat content. You can easily flavor the mayonnaise with a little extra Dijon mustard, paprika and chili sauce according to your preferences.

Ingredients

500 g ground beef
1 large red onion in slices
Butter (for the burger buns)
4 burger buns (preferably brioche)
4 slices cheddar cheese
Pickles and lettuce for serving
Mayonnaise (Optionally flavored with Dijon, paprika and chili sauce)
Oil for frying
Salt and pepper

How to do it

Mix the mayonnaise with your favorite flavorings - for example Dijon, paprika and/or chili sauce.

Divide the beef into four equal portions and shape into balls.

Heat the griddle or frying pan to medium/high heat for 3-5 minutes, and spread a thin layer of cooking oil.

When the griddle is hot, put the red onion slices on for a couple of minutes until they get color. Set them aside.

Distribute the four patties (which are now shaped like balls) on the griddle and smash them with a lightly oiled smasher / grill press so they become completely flat. It doesn't matter if they're not perfectly round. The edges will brown and get a delicious crust. Give them about 2 minutes and sprinkle with salt.

Flip the patties and let them cook for another minute, after which the cheddar slices are distributed and the patties finish cooking for about 1 more minute while the cheese melts.

Now place the buttered brioche buns on the griddle and let them brown for about 1-2 minutes. Keep a close eye on them so they don't burn.

Your smash burgers are now ready! Spread the mayonnaise dressing on the buns and now add a piece of lettuce, the patties, red onion and the pickles.
