Omelet with Spinach and Goat Cheese
The omelet is easy to make and has a melting interior of goat cheese, which gives it an extra level. Make it for brunch, as lunch or light dinner with a large green salad and good bread.

Ingredients

eggs
1 cup
fresh goat cheese in oil - (you can also use other fresh goat cheese. Optionally a stick of goat cheese, which you free from the outermost rind and cut into smaller pieces.)
250 g
washed and prepared spinach
2 cloves
garlic
salt
pepper
olive oil
Avoid screen shutting off

Instructions

Spinach
Step 1/3
Take a large pan or pot and fry a little finely chopped garlic in olive oil for a minute.
Step 2/3
Then add the spinach. It will collapse completely and turn dark green.
Step 3/3
Season with salt and pepper and set aside.
The Omelet
Step 1/11
A carbon steel pan with good seasoning is heated thoroughly.
Step 2/11
Oil is added - it is important that the oil is hot when the eggs are added.
Step 3/11
Whisk the eggs together with salt and pepper.
Step 4/11
Add the eggs to the hot pan.
Step 5/11
Whisk for half a minute, so the egg mixture is turned around against the hot pan.
Step 6/11
Then let the omelet seal while the goat cheese is added. Turn down the heat a bit if necessary, so the omelet cooks through and the cheese begins to melt.

Then add the spinach here and there between the pieces of goat cheese.
Step 8/11
With a spatula, you feel along the edge of the pan that the omelet is coming loose.

Then you let it half slide off the pan either onto a large plate, a baking dish or a cutting board.

When it has half slid off the pan, fold the other half over. Practice makes perfect.

Now the omelet can be cut into pieces, where you should be able to see the creamy goat cheese melt over the spinach.
