Whole roasted flatfish with a rich, brown butter sauce with anchovies, lemon fillets, parsley and capers – this is dinner that tastes like much more than the effort requires.
Flounder is used here, but all types of flatfish work.
Tip: Adjust the cooking time based on the size of the fish – a smaller fish is done in just a few minutes, while a larger one needs a bit more time.

Ingredients

cleaned and filleted flatfish, e.g. flounder

dl
rye flour
Butter and neutral oil for frying
Salt and pepper

butter
2
shallots, finely chopped
4
anchovy fillets, finely chopped
4
tbsp
capers
2
lemons (fillets + a bit of juice)

hazelnuts, shelled and coarsely chopped

bunch
parsley, chopped
Optional dill or bronze fennel for garnish

Instructions
Step 1/6
Rinse the fish and coat them in flour.
Step 2/6
Fry them golden in butter and oil, approximately 3-4 minutes on each side. Season with salt and pepper, and set aside.

Melt the butter in a pan and let it turn golden.
Step 4/6
Add shallots, anchovies and capers.
Step 5/6
Fold in lemon fillets, hazelnuts and parsley, and taste and adjust with lemon juice.
Step 6/6
Pour the sauce over the fish, garnish with dill or bronze fennel if desired, and serve immediately.
